Watermelon (Citrullus Lanatus) is of the botanical family Curcurbitaceae and is a cousin to the cucumber, pumpkin, and squash. In the 1800s, Watermelon growers would defend their patches from pillagers by randomly poisoning and even electrically booby-trapping their precious melons. We like our Watermelon to have a Brix of about 10-12, but this number can fluctuate widely depending on the time of year and origin. We think Watermelon should be more known for its high levels of lycopene, citrulline, and B vitamins than for their sweetness. Also, by being 96% water it is certainly more fun to hydrate with than plain H2O.
