Brown Rice and Apple Porridge

- 1 cup cooked brown rice
- ⅓ white cup quinoa, rinsed and drained
- 1 cinnamon stick
- 3 medjool dates, chopped
- 1 green apple, diced
- 1 Tbsp. chia seeds
- 1 Tbsp. flax
- 2 cups nut milk of choice, plus extra to serve
- 1 tsp. vanilla
- Add the rice, quinoa, chopped dates, 1 ½ cups of the nutmilk, cinnamon stick and a pinch of salt to a small saucepan.
- Bring to a simmer, then cook on low for about 10 minutes, until the quinoa is nearly cooked through. Add the chopped apple, chia and flax, and a little extra liquid (nut milk or water) if necessary. Simmer until the apples are soft then stir through the vanilla.
- Remove the cinnamon stick. Serve with chopped walnuts over the top, a little extra milk, maple syrup (if using) and a sprinkle of ground cinnamon.
