Ingredients
  • 1 cup cooked brown rice
  • ⅓ white cup quinoa, rinsed and drained
  • 1 cinnamon stick
  • 3 medjool dates, chopped
  • 1 green apple, diced
  • 1 Tbsp. chia seeds
  • 1 Tbsp. flax
  • 2 cups nut milk of choice, plus extra to serve
  • 1 tsp. vanilla
Directions
  1. Add the rice, quinoa, chopped dates, 1 ½ cups of the nutmilk, cinnamon stick and a pinch of salt to a small saucepan.
  2. Bring to a simmer, then cook on low for about 10 minutes, until the quinoa is nearly cooked through. Add the chopped apple, chia and flax, and a little extra liquid (nut milk or water) if necessary. Simmer until the apples are soft then stir through the vanilla.
  3. Remove the cinnamon stick. Serve with chopped walnuts over the top, a little extra milk, maple syrup (if using) and a sprinkle of ground cinnamon.
